I’m feeding my family of 20 Christmas dinner from food I found in bins – the amount of cheese I found will last ages | The Sun

A WOMAN has revealed that she will be makingfood to feed her family of 20 people for Christmas dinner using ingredients she found in a bin.

Dumpster diver Sofie Juel Anderson, 29 has spent the last three years eating out of bins and has rescued vegetables, cheese and even meat from bins outside supermarkets.


The restaurant manager said her parents are very supportive of her fight against food waste and added that she often brings food she has found in the bin to family get togethers and dinner parties with friends.

Sofie, who is from Aarhus Denmark, is contributing to the family Christmas dinner this year by making a winter salad, using lettuce found in a bin outside a shop and pickled cabbage thrown away by a restaurant.

She told the SWNS news agency: "I'll be bringing a winter salad and pickled red cabbage to Christmas.

"There's no need for me to go out and buy stuff – my family support my fight against food waste.

"I'm seeing a lot of festive foods being thrown out by the supermarkets – you can usually tell by the amount of dessert ingredients, cabbages and meats in the dumpsters."

Discussing the food items she has scavenged for the salad, Sofie continued: "The other day I found a kilo of cashew nuts.

"I'll definitely be adding those to the dish.

"I found a lot of cheese – shredded cheese and parmesan, which won't go bad until the New Year.

"I've got some apples, which will go really great with the cabbage I found.

"I do often find pre-mixed salads, and in the ones where the leaves have wilted, I just take the salad cream. I have hundreds of packets of sauce saved up."

The dumpster diver said that she can tell when shops start to throw out their festive products by the amount of duck and pork that gets dumped, which are the traditional meats eaten by Danish people at Christmas.

Sofie said that her parents are happy for her to bring the dumpster food to the Christmas meal, but want her to make sure that it is clean.

She said: "My mum came to me and said, 'we're doing a big family dinner – please make sure it's clean'," Sofie said.

"But I'd never bring anything dirty or expired, I always make sure I can actually eat the food before I bring it home.

"In fact, in the New Year, I'll be getting together with my friends who dive and putting on a massive dinner party, made with food from dumpsters only."
